Are you guys starting to feel a bit like we are living a real-life Ground Hog Day (you know, the movie? Days are looking mighty similar and endless over here…)? July is looking a whole lot like March (except the heat, bless) and I’ll be honest it hasn’t been easy on my mental health.
A trend I have been enlightened by recently, though, is that the days in which I get myself and my girls OUTSIDE are just… better. The girls are more independent, I’m less moody (dare I say happy even??) and we all benefit. But with temperatures exceeding 100 degrees pretty consistently these days it’s tough to motivate myself to get us out of our four walls! We could wake up at 6:30 and enjoy the outdoors while it’s a nice, cool 95 degrees I suppose? *note sarcasm*
Maxine came to our rescue last week with the idea to make yogurt blueberry popsicles. She was thumbing through a kids’ magazine and saw the cute little cartoon ants using a popsicle stick to stir together yogurt, blueberries, and honey. Maxine eagerly pushed the magazine over to me asking, “Mom! What are they making? Can we make these??” My immediate internal reaction was NOPE. Not making a mess, little girl! But thankfully before I spoke I read the recipe and saw that it contained only three ingredients, all of which we had on hand: yogurt, blueberries, and honey. We have a popsicle mold (thanks, Mom!) so I agreed, “Yes, we can make these love.”
I don’t have exact measurements. I looked at our popsicle mold and guessed as to how much of the batter we would need to fill the 8 tiny cups. For our popsicle mold, we needed about two cups of batter, so this was the recipe that we used:
1 cup whole fat greek yogurt
1/2 cup frozen blueberries (you could absolutely use fresh)
1 Tbls. honey
Mix all ingredients together in a small bowl, spoon into the molds, and freeze for a minimum of 4 hours, up to overnight. These are really healthy, so I willingly let my kids eat two of them in one sitting, ha!
